Smoked salmon is a very versatile and elegant food to add to a brunch or special occasion as well as in every day breakfast, lunch and dinner menus.

There are actually two forms of smoked salmon: cold and hot smoked.  Hot smoked salmon cooks the fish using a smoker or barbecue grill.  The salmon is then cut up into chunks and can then be used in a smoked salmon recipe for pasta, appetizers, salads, frittatas and other tasty dishes.  Cold smoked salmon is also known as lox.  The process does not actually involve smoking but instead moisture is drawn out of the salmon and flavor is added.  The salmon is thinly sliced and can be served as lox with cream cheese and bagels or other delicious breakfast and brunch menus.

Smoked Salmon Fettuccine

Here is a simple, but delicious smoked salmon pasta recipe.

Ingredients

1/2 pound of Smoked Salmon
2 tbsp Flour
2 tbsp Butter
1 tbsp chopped parsley
1 cup milk
2 tbsp sour cream
12 thinly sliced, pitted black olives
3 tsp bourbon or scotch
1 pound pasta

Cooking Directions

Melt the butter and then whisk the flour in. Add the sour cream and milk gradually.  Add salt and pepper to taste. Stir until the sauce thickens. Add the salmon, parsley and scotch or bourbon.  Cook the pasta and drain it well. Then add the mixture with smoked salmon to the pasta. Blend well.  Sprinkle the pasta with parmesan cheese.

Smoked Salmon Quiche

This makes an elegant dish to serve for brunch.

Ingredients:

1 pie crust
6 ounces Smoked Salmon
1 cup of whipping cream
4 eggs
8 ounces of shredded Swiss cheese
1/4 tsp nutmeg
1/4 tsp cayenne pepper
1/4 tsp salt

Cooking Directions

Preheat the oven at 375 degrees.
Place the smoked salmon over the bottom of the pie crust evenly. Add the Swiss cheese to the top.  Blend the nutmeg, pepper, salt, eggs and whipping cream together in a medium bowl.  Pour the mixture on top of cheese.  Bake in the oven for 40-45 minutes.  The quiche should be lightly browned and puffed.

Smoked Salmon Bites

This is a great smoked salmon appetizer for parties and special occasions.

Ingredients

1 cup chopped Smoked Salmon
4 ounces of garlic and soft herb cheese
1 teaspoon finely grated lemon peel
1 tbsp of drained and chopped capers
2 sprigs of dill sprigs
1/2 cucumber, sliced into 1/4 inch slices
1 loaf of sliced Pumpernickel bread

1 loaf mini party size pumpernickel bread(usually found in the deli department at the grocery store)

Mix the salmon, lemon zest capers and cheese together in a small bowl.  Spread onto pumpernickel bread slices and top with a slice of cucumber and sprig of dill.
